Cheesy Tteokbokki with Boiled Eggs and Kimchi

Tteokbokki, a beloved Korean street food, gets a delightful upgrade with the addition of cheese and savory boiled eggs. Served alongside tangy, spicy kimchi.

Whether you're craving a quick meal or a comforting snack, this cheesy tteokbokki is the perfect option !

Ingredients:

  • 1 pack of tteokbokki sauce (available at Asian Spice)
  • 200g rice cakes (tteok)
  • 2-3 boiled eggs
  • A handful of shredded mozzarella cheese (or cheddar cheese)
  • 100g kimchi (for serving)
  • 1-2 cloves of garlic, minced
  • 1 tablespoon vegetable oil
  • 1/2 cup water (or broth)
  • 1 tablespoon sesame seeds (optional)

How to cook? 

Prepare the Ingredients:

  • Boil rice cakesfor 2-3 minutes until soft.
  • Boil the eggs for 5-6 minutes, peel, and cut them in half.
  • Prepare shredded mozzarella cheese (50-100g, depending on preference).
  • Have the kimchi ready to serve on the side.

  1. Cook Garlic:
    Heat oil and cook the minced garlic until fragrant.

  2. Cook the Rice Cakes:

    • Add rice cakes to the pan and pour in the tteokbokki sauce.
    • Add 1/2 cup of water (or broth), stirring well to dissolve the sauce.
    • Cover and cook for 5-7 minutes until the rice cakes absorb the sauce and become tender.
  3. Add Boiled Eggs:

    • Once the rice cakes are cooked, add the boiled eggs to the pan and let them heat through for a few minutes.
  4. Add Cheese:

    • Sprinkle shredded mozzarella cheese on top of the rice cakes.
    • Cover the pan for 1-2 minutes to melt the cheese.
  5. Serve with Kimchi:

    • Plate the tteokbokki and serve it hot with a generous portion of kimchi on the side.
    • Optionally, sprinkle sesame seeds on top for added texture.
