Shanghai Fried Noodles

Ingredients: 

  1. 200g Shanghai noodles (available at Asian grocery stores)
  2. 2-3 tablespoons soy sauce
  3. 100g pak choy, washed and cut into pieces
  4. 2 chili peppers, finely chopped
  5. 200g pork or beef, thinly sliced
  6. 1 onion, sliced
  7. 2 cloves garlic
  8. 2 green onions, cut into pieces
  9. 2-3 tablespoons cooking oil
  10. 1 tablespoon oyster sauce
  11. Salt and pepper

Cooking Instructions:

1. Prepare the noodles:

  • Cook the Shanghai noodles according to the package instructions until they are al dente.
  • Rinse the noodles under cold water to prevent them from sticking together, then drain well.

2. Marinate the meat:

  • Marinate the meat with a pinch of salt, pepper, and 1 tablespoon of soy sauce for about 10-15 minutes.

3. Stir-fry the meat:

  • Heat 1-2 tablespoons of cooking oil in a large pan or wok over high heat.
  • Add the meat and stir-fry until it is cooked through and has a golden brown color. Remove the meat and set it aside.

4. Stir-fry the vegetables:

  • Add a little more oil to the pan if needed. Add the minced garlic and stir-fry until fragrant.
  • Add the onion and stir-fry until it becomes soft.
  • Add the bok choy or choy sum to the pan and stir-fry until the vegetables are just tender.

5. Combine the ingredients:

  • Return the cooked meat to the pan with the vegetables and mix well.
  • Add the noodles to the pan and stir-fry to combine the noodles with the meat and vegetables.
  • Add soy sauce, oyster sauce, and sesame oil (if using), mixing well to coat the noodles with the sauces.
  • Adjust the seasoning with salt and pepper to taste.

6. Finish and enjoy:

  • Add the green onions to the pan, mix well, then turn off the heat.
  • Transfer the Shanghai noodles to a plate and enjoy while hot.
